Watermelon Margarita Popsicles (No Sugar Added)

Boozy watermelon margarita popsicles with no added sugar.

Ingredients

  • 1 small (about 5-6 pounds) watermelon cut into pieces
  • Juice of 1 lime
  • 4 ounces silver tequila
  • 1/4 tsp (or to taste) sea salt 

Instructions

  • Cut the watermelon into smallish pieces (discard rind) and place them in your blender. Blend until pulverized.
  • Add the lime juice, tequila, and salt to the blender. Mix.
  • Pour into the popsicle mold, being careful not to fill each cavity right to the top since it'll expand when you freeze it. Freeze for about 2-2.5 hours and insert the sticks at that point. Freeze for an additional 3-4 hours. 
  • To easily remove the popsicles from the mold, fill your sink with hot water and carefully dunk the mold into it for a few seconds. Popsicles should easily slide out. Transfer remaining popsicles to a large Ziploc bag to keep them fresh in the freezer. 

Notes

  • This is the awesome popsicle mold I used for this recipe!
  • You may have a bit left over depending on the size of melon and how much juice you can get out of it. That's ok, though, because when life gives you extra watermelon margaritas, life is good.
  • If you really don't want to add the extra salt, you don't need to, but I love salt-rimmed margarita glasses, and this brings some of that taste to the popsicles without going overboard. 
  • If your watermelon has a lot of black seeds, you could always strain it out, but in general, I don't think you need to strain watermelon juice.
