  • 1 tablespoon olive oil
  • 1/2 medium onion chopped
  • 1 medium-to-large sweet potato peeled & diced
  • 4 cloves garlic minced
  • 1 pound lean ground turkey
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper optional
  • 1 (28 fluid ounce) can fire-roasted diced tomatoes with juices
  • 1 cup chicken broth
  • 1 (14 fluid ounce) can red kidney beans drained
  • Salt & pepper to taste

Toppings (optional):

  • Cheddar cheese grated, to taste
  • Cilantro chopped
  • Avocado diced
  • Sour cream or Greek yogurt to taste
  • Scallions chopped, to taste

  1. Prep your sweet potato and onion.

  2. Add the oil to a large soup pot and sauté the onion over medium-high heat for 5 minutes.

  3. Add the garlic and turkey to the pot and cook, stirring occasionally, for 5 minutes or until the turkey turns white on the outside.

  4. Add the chili powder, cumin, paprika, and cayenne pepper. Give it a good stir.

  5. Add the diced tomatoes, chicken broth, kidney beans, and sweet potatoes.

  6. Increase the heat and bring the chili to a boil. Once it's bubbling, reduce the heat to medium and cover the pot with the lid slightly ajar. Let it cook for 15-25 minutes or until the sweet potatoes have softened (depends how big you cut the pieces). I like to give it an occasional stir.

  7. Season with extra salt & pepper if needed and garnish with desired toppings.
