3-Ingredient Apricot Bliss Balls

- 1 cup (about 1 dozen) Medjool dates pitted
- 1 cup dried apricots
- 1 cup unsalted cashews
Measure out your dates, apricots, and cashews. Make sure to pit the dates if they aren't already. Add everything to the bowl of a food processor.
To begin with, pulse the mixture to break everything up. Process on high for about a minute at a time, pausing to scrape down the sizes of your bowl. After about 3-5 minutes of processing, you should have a pretty consistent mixture.
Once you're satisfied with how small everything is blended, roll the mixture into 1.5" balls. You should yield around 16 balls.
The balls will be quite sticky and feel oily. I like to keep them in the fridge in an enclosed container. These will keep for at least a few weeks in the fridge and can also be frozen.
