3-Ingredient Apricot Bliss Balls

A 3-ingredient vegan apricot energy bites recipe.

Ingredients

  • 1 cup (about 1 dozen) Medjool dates pitted
  • 1 cup dried apricots
  • 1 cup unsalted cashews

Instructions

  • Measure out your dates, apricots, and cashews. Make sure to pit the dates if they aren't already. Add everything to the bowl of a food processor.
  • To begin with, pulse the mixture to break everything up. Process on high for about a minute at a time, pausing to scrape down the sizes of your bowl. After about 3-5 minutes of processing, you should have a pretty consistent mixture. 
  • Once you're satisfied with how small everything is blended, roll the mixture into 1.5" balls. You should yield around 16 balls. 
  • The balls will be quite sticky and feel oily. I like to keep them in the fridge in an enclosed container. These will keep for at least a few weeks in the fridge and can also be frozen.
