Pumpkin Pie Breakfast Popsicles

Easy pumpkin pie popsicles that aren't bad for ya!

Ingredients

  • 1 cup pumpkin purée
  • 1/2 teaspoon pumpkin spice
  • 1 tablespoon honey
  • 1.5 cups vanilla Greek yogurt
  • 1/2 cup milk
  • 1/2 cup granola 

Instructions

  • In a small bowl, combine the pumpkin purée, pumpkin spice, and honey. If you want the mixture a little sweeter, add more honey as needed. 
  • In another bowl or large measuring cup, combine the yogurt and milk.
  • Layer the yogurt, pumpkin mixture, and granola in the popsicle molds until they're filled. I suggest using a small spoon to make this process easier. It's a good idea to look for any air bubbles and push them out with the spoon as you're going along. 
  • You should be able to add the popsicle sticks since the mixture will be fairly thick, but if you're having issues with them popping out, let the popsicles freeze for about 2 hours then try adding them at that point.
  • Freeze the popsicles for at least 6 hours. When they're frozen, you can take them out of a mold and store them in a large ZipLoc. 

Notes

  • To easily remove popsicles from mold, fill sink with hot water and then carefully immerse the frozen part of the mold in the water for 8-10 seconds.
