- 1 pound salmon (about 1" thick) skin removed
- Salt & pepper to taste
- 1 tablespoon olive oil
- 2 tablespoons butter divided
- 4 cloves garlic minced
- 1 tablespoon lemon juice or to taste
- 1 tablespoon chopped fresh parsley
Cut the salmon into 1" pieces and pat it dry with paper towels. Season all over with salt & pepper.
Add the olive oil and 1 tablespoon of the butter to a large skillet over medium-high heat.
Once the pan is HOT, add the salmon in and cook for 2 minutes undisturbed, then turn it using tongs until browned on all sides and cooked through (about another 2-3 minutes). Transfer to a plate.
Turn the heat down to medium-low. Add the remaining butter to the pan and let it melt. Stir in the garlic. Continue stirring for a minute or so until the garlic is just cooked (don't let it burn). Take the skillet off the heat once it's done.
Add the salmon back to the skillet, along with the lemon juice and parsley. Toss gently to combine, and serve immediately with extra salt & pepper if needed.
