Garlic Butter Salmon Bites

This garlic butter salmon bites recipe pairs flaky salmon with a really simple, silky buttery garlic sauce that has a burst of fresh lemon! It's ready in just 20 minutes.

Ingredients

  • 1 pound salmon (about 1" thick) skin removed
  • Salt & pepper to taste
  • 1 tablespoon olive oil
  • 2 tablespoons butter divided
  • 4 cloves garlic minced
  • 1 tablespoon lemon juice or to taste
  • 1 tablespoon chopped fresh parsley

Instructions

  • Cut the salmon into 1" pieces and pat it dry with paper towels. Season all over with salt & pepper.
  • Add the olive oil and 1 tablespoon of the butter to a large skillet over medium-high heat.
  • Once the pan is HOT, add the salmon in and cook for 2 minutes undisturbed, then turn it using tongs until browned on all sides and cooked through (about another 2-3 minutes). Transfer to a plate.
  • Turn the heat down to medium-low. Add the remaining butter to the pan and let it melt. Stir in the garlic. Continue stirring for a minute or so until the garlic is just cooked (don't let it burn). Take the skillet off the heat once it's done.
  • Add the salmon back to the skillet, along with the lemon juice and parsley. Toss gently to combine, and serve immediately with extra salt & pepper if needed.
