This easy and zesty Italian chopped salad recipe is overflowing with good stuff. Salami, fresh vegetables, and tangy pepperoncini peppers make this one flavorful salad!
1cuplittle tomatoes (grape, cherry, etc.)cut into halves
3/4cupchopped cucumber
1cuploosely packed chopped/sliced salamisee note
3tablespoonschopped red onion
1/3cupchopped pepperoncini peppers
1/3-1/2cuphalved Kalamata olivesor black olives
1/2cupfreshly grated parmesan cheese+ more for serving
2tablespoonsthinly sliced fresh basil
Dressing:
2tablespoonsolive oil
2tablespoonsmayo
2tablespoonswhite vinegar
1/2teaspoongranulated sugar
1/2teaspoonItalian seasoning
1/2teaspoongarlic powder
Salt & pepperto taste
Instructions
Add the dressing ingredients to a medium bowl and whisk together.
Prep the remaining ingredients and add them to a large salad bowl as you go along.
Pour the dressing over and toss until coated. Taste and season with extra salt & pepper as needed and serve immediately with extra parm grated over top if desired.
Notes
For this salad, I buy pre-sliced salami and then cut it into fairly thin strips. You can buy a whole salami and dice it up if you prefer.
This salad is flexible - you can easily sub/omit anything you don't like/don't have in stock. You can eyeball many of the ingredients. If making subs with the dressing, be sure to taste and adjust as you go along.
