This rhubarb Moscow mule is a great way to use up leftover rhubarb juice! It’s spicy, refreshing, and adds a balanced sweetness that tastes like summer should.

If you’ve been making rhubarb recipes lately, chances are that you’ve been left with some rhubarb juice.

This is the way to use it rather than letting it sit in your fridge until you have to throw it out. Rhubarb cocktails are where it’s at!

I confess that most of the drinks on my blog aren’t 100% my genius. My husband was a bartender way back in the Dark Ages, so he is pretty useful when I pester him for cocktail ideas.

I don’t even drink much, but I’ve been trying to put some cocktails on the blog this summer. Give me a wine spritzer and I’m good, basically.

In this case, I wanted a summery twist on the Moscow Mule. This is it!

Not so long ago, I came up with a grapefruit twist on the Irish mule (it was all me that time, actually). You may like it too if you’re a mule fan! It’s equally refreshing and perfect for summer.

Rhubarb Moscow Mule

This rhubarb Moscow mule is a great way to use up leftover rhubarb juice! It's spicy and refreshing.
Prep: 5 minutes
Total: 5 minutes
Servings: 1 drink

Ingredients 

  • Ice
  • 2 ounces rhubarb juice (e.g. from stewed rhubarb you've used to make a pie or crumble with)
  • 2 ounces vodka
  • Spicy ginger beer
  • Lime wedge

Instructions 

  • Fill mule mug halfway with ice.
  • Add in the rhubarb juice and vodka. 
  • Top up with spicy ginger beer. 
  • Give the drink a stir and add a lime wedge if desired. Enjoy immediately.
