This Crockpot Italian sausage soup recipe is hearty, filling, and full of flavor. A wonderful and easy set it and forget it soup recipe.
Another day, another easy slow cooker soup recipe. This Italian sausage and bean soup really hits the spot.
If you read my blog with any regularity, you'll notice that I've posted a lot of Crockpot soup recipes lately. It's just that time of year I guess. I love the ease of slow cooking!
As with many of my other Crockpot recipes, I keep the prep time fairly short so you can pop it on before work, or you can go to bed and have a delicious piping hot bowl of soup when you next check your Crockpot... with minimal exertion.
This easy Italian sausage soup recipe is filled with veggies, so you can feel good about eating it.
I used mild Italian sausages, but feel free to use hot ones or any other uncooked sausage that you fancy.
Pro tip: I didn't brown the sausage before adding it to the Crockpot, but you can definitely do that if you wish!
This soup is nice and comforting. Between the sausage, pasta, and hearty tomato broth, we've got a lot of yummy stuff in here.
How to make slow cooker Italian sausage soup
I let this soup cook for 8 hours... but you don't need to be exact here. A bit less or bit longer won't hurt.
When this Crockpot white bean and sausage soup is about done, you stir in the pasta. Let it cook for another half hour or so, add in the spinach, and then dish it up.
As with any soup that contains pasta, I think that it tastes best served fresh. Leaving it makes the pasta soak up the broth even more, so be prepared for that. You can always add more veg broth in to replenish the liquid if necessary.

What's your favorite fall or winter soup recipe?

Crockpot Italian Sausage Soup
Ingredients
- 1 (17.6 ounce) package Italian sausages (see note) cut into bite-size pieces
- 1 medium onion diced
- 2 large carrots peeled & sliced
- 1 (19 fluid ounce) can white beans drained
- 1 (28 fluid ounce) can diced tomatoes with juices
- 4 cups vegetable broth
- 4 dashes Italian seasoning
- 1 teaspoon garlic powder
- 1 cup uncooked tubular pasta (I used macaroni)
- 2 large handfuls fresh baby spinach
- Salt & pepper to taste
Instructions
- Prep your sausage, onion, and carrots. I find it easiest to take the sausages out of their casings and then break them into bite-size pieces. You can fry the sausage in a skillet and then drain the fat if you wish prior to adding it to the Crockpot, but this step is not necessary.
- Add all ingredients except the pasta, spinach, and salt & pepper to a slow cooker. Cook on low for 6-8 hours.
- About 30 minutes prior to serving, add the pasta and stir the soup every 10 minutes or so to prevent it from sticking on the bottom.
- When you're 5-10 minutes away from serving, stir in the spinach and season the soup with salt & pepper as needed. Serve immediately.
Notes
- Regarding the sausages, anything around the 17.6 ounce mark would work. I bought a pack of 5 mild Italian sausages for this recipe.
- This is the 7 quart Crockpot I used for this recipe.

I made the soup on the stove on low, used what I had in the fridge and we enjoyed it. Fast and easy recipe, next time I would chose a more spicy sausage and another dash of seasoning. Thanks, I will definitely make it again

Excellent!
K says
Can you please tell me do you precook the pasta?
Natasha says
Hi! No. The recipe will always indicate if something has to be pre-cooked. Hope you like the soup!
Steve says
I added a squeeze tube of double concentrated tomato paste. It gave it a perfect tomatoey punch to the broth and tangy flavor that I highly recommend.
Natasha says
Excellent!
Kay says
No one in my house will eat beans. Can you suggest a substitution?
Natasha says
I'd probably just leave them out. Sweet corn could be good in here perhaps!
Sharon Gaytan says
What kind of white beans did you use for this sausage soup?
Natasha says
Just canned cannellini beans. I'm in Canada and often buy the Unico brand.
Dina says
This soup was amazing, I wasn't sure about a sausage soup, but this had everyone begging for more. The broth is so flavorful, I pre-cooked the sausage and did not drain off the fat, I think that added to the flavor.
Natasha says
Thank you so much!! That's great... I'm so glad everyone liked it. 😀

Made this recipe again for my Mom and Italian Grandmother-they loved it! Used Ditalani noodles this time, added the spinach at the end. But this time I made it in a large pot on the stove as my Mom dsnt have a crock pot or insta pot. I first sautéed the onions and carrots in olive oil and added them to the pot with the vegetable broth and other ingredients then i sautéed the Italian sausage(without casing) in the leftover olive oil and added that to pot after browned. I added white beans, stewed tomatoes with the juices, garlic powder, Italian season, salt and pepper to taste and cooked on low heat for 6 hrs. Served with parm cheese sprinkled on top and it was once again a hit
Natasha says
Wonderful!! Thanks for the tips! 🙂
Sarah says
This turned out amazing! I sautéed the sausage with onion, some minced garlic, and also added a bell pepper too. I couldn't get Spinach. Still turned out amazing.
I put the pasta in when I served it so I could freeze leftovers. Have my second batch in two weeks in the slow cooker right now.
Natasha says
Great!! 🙂

My family loved this recipe! I added an extra carrot & half a cup more of macaroni noodles, plus two cups of water. I cooked it high for 3hrs & 40 min.
Thank you for this awesome recipe!
Natasha says
You’re very welcome! ♥️♥️
Brenda Prichard says
Can you tell me about how many calories this soup has and the amount of sugar it contains? Thank you
Natasha says
Hi Brenda! At this time I don't have nutritional info on this recipe. All nutrition info is just an estimate anyway - it really depends on what brand/type of sausage, tomatoes, and pasta you use etc. If you need this info for health reasons, I suggest plugging the EXACT ingredients you're planning on using into something like My Fitness Pal. Sorry for the inconvenience!
Torie says
Can I cook it on high instead of low? Can’t wait to try this recipe!
Natasha says
Sure! Try 3 hours. Let me know how it goes!
Suzi says
Would black beans work in this instead of white beans?
Natasha says
I don’t see why not if you prefer those 😊
Suzi says
It turned out great. I made a few modifications- black beans instead of white, cooked the italian sausage before putting it into the crockpot and I used tortellini instead of macaroni. My kids devoured it! Thanks!
Natasha says
Wonderful!!
Trish says
Great soup on a cold winter night!
Used chicken broth instead of vegetable broth, because it was what I had in the house.
Removed sausage from the casing and did not fry before adding. Turned out great.
The house smelled wonderful all day, Highly recommend.
Natasha says
I'm so happy you liked it, Trish!! Thanks for leaving a comment. 🙂
Danny Shrieve says
Great recipe!
Is there a version for the Instapot?
Thanks!
Natasha says
Hi! Thanks. I don't have one specifically, but I'd brown the sausage in the IP (saute setting), add the remaining ingredients except for spinach, and cook it on high pressure for 7 or 8 minutes. Just be sure not to exceed the max fill line, so you may need to add less broth (not sure since I haven't tested this). Add the spinach in at the end and let it wilt for a couple minutes. Let me know how it goes if you do try!
Danny Shrieve says
I sure will! I have made your recipe twice by the slow cooker-awesome each time!
Natasha says
That's great!!
Danny Shrieve says
Hi Natasha,
Your Instapot method worked perfectly.
Thank you!
Natasha says
Excellent!! Thanks for letting me know.
Shann says
Can you use ground Italian sausage instead? It seems like it would be simpler.
Natasha says
Absolutely! Hope you like the soup. ❤️
Brenda says
This was amazing will definitely making it again☺☺☺☺☺
Natasha says
Yay!! So happy you liked it!
Michelle says
Can you add other vegetables to this soup?
Natasha says
Sure! I don't see why not. Hope you enjoy the soup, Michelle!
Christy says
Can this be made on a stovetop?
Natasha says
Absolutely! I haven't tested it myself, but I don't see why it wouldn't work. I'd still add the pasta and spinach in closer to the end of cooking. Let me know how it goes!
Macy says
I made this tonight to break in the new crockpot and it was great! Thanks so much, I love your site.
Natasha says
So happy to hear it!! Thank you 😊😊
Kirstin says
Can you double the recipe when needing to feed more??
Natasha says
Hi Kirstin! Doubling the recipe won't fit into a standard size Crockpot, unfortunately. Maybe you can borrow one from a friend and make two batches at the same time?
Natasha says
Not a dumb question. 😊 Nope, I put it in raw. If you wanted to brown the sausage beforehand, it wouldn’t hurt, but I don’t think it’s necessary.
Alicia says
Hi, can you sub Kale for spinach? Or is the spinach providing additional flavors and textures?
Natasha says
I reckon kale would work fine. 😊
Bobbie says
Just to be clear, you add the raw sausage to the crockpot? Is the soup greasy? I cant wait to make this tomorrow! Thanks
Natasha says
Hi Bobbie! Yes, I added raw sausage to the Crockpot. If you prefer, you can lightly brown it first. The sausage I used didn’t end up making the soup too greasy at all. It definitely adds a bit of fat, but I wouldn’t say it made it greasy. Hope you enjoy the recipe! 😊
Bobbie says
I totally forgot to come back and tell you how delicious this soup was! I chickened out and browned the sausage before adding it to the slow cooker haha. This is a new family favorite! Thanks!!!
Natasha says
Lol no worries. Thanks for coming back. So glad you liked the soup and nothing wrong with browning the sausage!!
Marie says
Thank you, I will try it because I am looking for new recipe for my family
Natasha says
Hope you enjoy it, Marie! 💛
Michelle says
I'm probably being dumb, but did you precook the sausage?
nancy says
This sounds so yummy, does it freeze well?
Natasha says
Thanks, Nancy! I think if you added the pasta after you thaw it, that would be fine. The pasta will probably be mushy if you freeze it with the pasta in it.
